Frugal Recipe: Easy Lettuce Wraps

Everyone makes them differently, but they’re always so delicious and are filled with some pretty bold flavors: you get saltiness from the soy sauce, a little spiciness from the sriracha, and some crunch from the veggies. They are a great option for low carb or gluten free diet, and

Easy Lettuce Wraps

This recipe for lettuce wraps is super simple. You’re basically just sauteing some veggies and chicken and then you’re good to go. Feel free to mix up the ingredients, too and use whatever veggies or meat you have on hand.

You’ll start by sauteeing the veggies in some olive oil.

Cook them until they’re soft, then add in the spices and sauces.

Finally, add in a pound of cooked chicken. I had this in the freezer so just thawed it and threw it in.

It was actually still slightly frozen, but it warmed up quickly.

How delicious does that look? As always, feel free to add more sriracha or other spices depending on your tastes!

Once the filling is done, you can fill your lettuce. You can use any kind of large-leafed lettuce. Just scoop the filling in and enjoy! We like to serve this alongside dumplings or egg rolls.

Lettuce Wraps

Ingredients

  • 1 head iceburg lettuce
  • 2 tbsp olive oil
  • 1 cup diced onion
  • 1 cup diced carrots
  • 1 jalapeno, diced
  • 1 minced garlic clove
  • 1 tbsp peeled and grated ginger
  • 3 tbsp sriracha
  • 1 tbsp honey
  • 1/2 cup soy sauce
  • 1 lb chicken breasts, cooked and chopped into small pieces

Directions

  1. To prepare the wraps, peel away the lettuce from the head in big pieces. Rinse, pat dry, and set aside.
  2. To make the filling, heat the olive oil in a saute pan over medium heat. Add the onion, carrots, and jalapeno and cook until soft, about 5 minutes. Add the garlic and ginger and cook until fragrant, about 1 minute. Add the sriracha, honey, and soy sauce and allow everything to simmer and reduce slightly, about 7-10 minutes. Add the chopped chicken and stir to combine.
  3. To serve, fill the lettuce cups with the chicken mixture (and then eat it as if you were eating a soft taco!).
