I have dozens of different recipes and really just pick and choose based on my mood. On a busy night, I’ll simply bake the sausage with peppers and onions and serve on a bun. That is probably how my boys love it best. But my favorite way to enjoy the sausage is roasted with fennel, potatoes and tomatoes. That combination of flavors is just beyond amazing. And the best part is that you just toss everything on a sheet pan and set a timer. Dinner is ready in about 30 minutes with almost no effort at all. Talk about an easy weeknight meal!
Grab a few ingredients and skip the “chore” of cooking with a meal that’s easy and delicious!
- 19 oz package Carando Sweet Italian Sausage
- 2 pounds fingerling potatoes, halved
- 2 fennel bulbs, stalks removed and cut into ½”slices
- 8 oz cherry tomatoes
- ¼ cup olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Preheat oven to 400º F.
- Place the potatoes, sliced fennel and tomatoes in a large bowl with the olive oil, garlic, salt and pepper and toss to coat.
- Place the veggies on a large baking sheet with the Carando Italian Sausage.
- Roast for about 30 minutes, until veggies are tender and caramelized and sausage is cooked through.
- Serve warm.
