I love having quick snacks on hand for hungry kids, but I don’t love it when they are eating chips or expensive pre-packaged snacks. That’s what I love these no bake energy bites! They are easy to make, contain lots of protein, but still kind of feel like a treat. You can make a double or triple batch and freeze them so that you always have some on hand for long afternoons.
No-Bake Energy Bites
All you need to start are ingredients you probably already have in your pantry!
You just need oats, flaxseed, vanilla, peanut butter (or any nut butter), honey, and mini chocolate chips.
In no particular order, add all the ingredients to a bowl.
Use a silicone spatula or wooden spoon to mix so that it doesn’t stick too much. If the mixture is too wet, add a bit more oats or flaxseed. If it’s too dry, add a bit more honey.
I use a tablespoon scoop to get the mixture out and use your hands to roll them into balls. Pro tip: If the mixture is getting stuck to your hands, get your hands just a little bit wet.
Put them on a wax lined tray or baking sheet and set them in the fridge to get harder.
Then you can move them to a smaller container. Store in the fridge or freezer!
Ingredients
- 1.5 cups oatmeal
- 1/3 cup peanut butter
- 1/3 cup honey
- 1/2 cup flaxseed
- 1/2 cup mini chocolate chips
- 1 tsp. vanilla
Directions
- Mix all the ingredients together in a bowl with a wooden spoon.
- Line a baking sheet or tray with wax paper.
- Use a tablespoon measure to scoop out balls of the mixture and place on the baking sheet.
- Let harden in the fridge for at least an hour before storing in a smaller container.
