Spinach & Cheese Stuffed Chicken Breast
Ingredients
- 2 tbsp olive oil
- 1/2 cup diced onion
- 1/2 cup chopped spinach
- 1/2 block cream cheese, room temperature
- 1 cup shredded cheese (whichever kind you prefer)
- salt and pepper
- 3-4 chicken breasts
Directions
- In an oven-safe skillet over medium heat, add the olive oil.
- Add the diced onion and chopped spinach and cook until softened, about 5 minutes. Remove from the pan and set aside until slightly cooled.
- In a bowl, mix together the cream cheese, shredded cheese, salt and pepper, and reserved veggies. Mix until well combined.
- Butterfly each chicken breast and sprinkle the outside with salt and pepper. Spread the cream cheese mixture over the inside of the chicken breasts and use toothpicks to hold together.
- Preheat the oven to 400 degrees.
- In the same skillet over medium heat on the stove (add more oil if needed), sear the chicken breasts on all sides until golden.
- Bake the chicken in the oven until cooked through (internal temperature should be 165 degrees), about 15 minutes.
- Remove the toothpicks and serve.
