One of my favorite ways to simplify meal planning and keep food costs low is to schedule breakfast for dinner about once a week. To be honest, actual breakfast for my kids during the week is usually a muffin or cereal bar and some fruit. But when I’m making breakfast for dinner, I’ve got more space to make something a little bit different—like this sausage egg bake.
Easy Sausage Egg Bake Recipe
This sausage egg bake is as simple as it sounds! It has just a few ingredients: sausage, eggs, cheese, and salt and pepper.
The first step is to brown the sausage.
While the sausage is cooking, whisk together all 12 eggs and add your seasonings. If you’re feeling really decadent, you can put in a few splashes of cream or milk as you whisk the eggs, but that’s not even necessary.
To save time, I just use a slotted spoon to put the sausage in a greased baking dish. A little bit of grease will keep it from sticking too badly, anyway.
Then pour the eggs over top.
Top with whatever kind of cheese you prefer! I used a triple cheddar blend, but any cheese will do.
The final product comes out cheesy and delicious. Another great thing about this sausage egg bake is that unlike many breakfast casseroles, it doesn’t include bread, potatoes, or some kind of crust. That makes it perfect for gluten-free and keto diets!
If you’re not concerned about gluten or carbs, though, I usually pair this with waffles, pancackes, or homemade muffins, as well as some fruit. We love eating chocolate banana muffins alongside these!
Ingredients
- 1 lb. pork sausage
- 12 eggs
- 8 oz. cheese, shredded
- Salt and pepper
Directions
- Preheat the oven to 350 degrees.
- Brown the sausage in a skillet over medium heat.
- Whisk the eggs in a large bowl and add salt and pepper.
- Spray a 13×9 baking dish with nonstick cooking spray, then spread the sausage out in the pan.
- Pour the whisked eggs over the sausage.
- Sprinkle the cheese on top of the eggs.
- Bake for about 15-20 minutes or until set.
I like to serve our sausage egg bake with fruit and pancakes. You could use a pancake mix or reheat frozen pancakes, but my favorite from-scratch pancakes are these Fluffy Pancakes. Alternatively, these Cream Cheese Pancakes are low-carb and gluten-free.
