Slow cooker meatloaf is one of my favorite recipes because it’s so easy and can sit and cook while you do other things.
If you’re on a low carb diet or have to avoid gluten, meatloaf can seem like it’s off limits due to the usual ingredients of bread crumbs or oats. I’ve found a way to make an incredibly moist and delicious meatloaf without either of those things!
The secret ingredient is chia seeds, which are not often used in savory dishes but can be perfect to serve as a binder for meatloaf or meatballs. I hope you try this gluten free slow cooker meatloaf and enjoy it!
Gluten Free Slow Cooker Meatloaf
I like to use the leanest ground beef I can find for health reasons, but any ground beef will do.
Put the beef in a bowl and use your fingers to break up the pieces.
Stir together the spice ingredients in a small bowl.
Add the spice mixture and chia seeds to the beef and stir to combine.
Spray the slow cooker with cooking spray, and shape the meat into a loaf and place inside.
Cook on low for 4-6 hours or on high for 2-3 hours. Mine was done in 4 hours.
You can also place the meatloaf on a trivet if you want to avoid the grease at the bottom, but since I was using lean meat I didn’t drain any of the grease off. I slice it into pieces in the slow cooker and serve from there.
We like to eat it with some kind of green vegetable and a yummy bread, and my kids love to dip it in ketchup!
Ingredients
- 1 tbsp. salt
- 1 tbsp. dried rosemary
- 2 tsp. dried thyme
- 2 tsp. dried oregano
- 3 tbsp. minced garlic
- 3 lb. lean ground beef
- 6 tbsp. chia seeds
Directions
- Break the beef up with your fingers in a large bowl.
- Add spices and chia seeds and continue to use your fingers to combine all of it together.
- Grease a 6 quart slow cooker with cooking spray.
- Shape the beef into a loaf and place it in the slow cooker.
- Cook on low for 4-6 hours or in high for 2-3 hours until the meatloaf reaches an internal temperature of 160 degrees.
- Slice into pieces and serve!
