- 8 oz Amish Country Colby Swiss, shredded
- 8 oz cream cheese, softened
- ½ cup dried cranberries, chopped
- 2 tablespoons chives, chopped
- 1 cup pistachios, chopped into small pieces
- Mix the cream cheese, Amish Country Colby Swiss, cranberries and chives in a medium bowl until combined.
- Form the mixture into a log and roll in the chopped pistachios, covering the log on all sides.
- Wrap in plastic wrap and refrigerate 1 – 2 hours.
- Serve with your favorite crackers.
