It’s soup season… and it’s one of my favorite times of year!
When the temperature stars to drop, the big pots come out and my slow cooker gets a workout. This time of year, it’s not at all unusual for me to have a big pot of something special bubbling away while I take care of work or manage other small chores around the house.
I probably cook a soup, stew or chili two, even three times a week while the weather is cooler. I am always looking for new recipes and ways to make the most of the ingredients I have handy. While the holidays will mean lots of tasty foods, it also entails lots of tasty leftovers as well. So—rather than waste any of that delicious food, I just get creative. When I can repurpose the season’s leftovers and turn them into a new mouth-watering creation, that’s a win in my book.
And while there are lots of ways to do that, at least when we’re talking turkey, one of my favorite uses for Thanksgiving leftovers is this hearty soup that’s ideal for filling bellies and warming hearts during the holiday season.
- 4 tablespoons butter
- 1 onion, chopped
- 3 – 4 carrots, sliced
- 2 celery ribs, chopped
- 2 cloves garlic, chopped
- ¼ cup flour
- 8 cups chicken broth
- 1½ – 2 cups turkey, cubed
- 1 tablespoon fresh thyme
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup RiceSelect Jasmati Rice
- 1 cup whole milk or half & half
- Melt butter in a large pot.
- Add the onion, carrots and celery and cook on medium high for 3 – 5 minutes until the onions are soft and translucent.
- Add the garlic and cook another minute until fragrant.
- Stir in the flour and cook for one minute, stirring constantly.
- Add the broth, turkey, thyme, salt & pepper and bring to a boil.
- Stir in the RiceSelect Jasmati Rice, reduce heat and simmer for 18 minutes.
- Stir in the milk (or half & half)
- Adjust seasoning as needed and serve.
