Of course meatballs are always best with noodles… at least according to my guys.
While not identical to pasta, zucchini zoodles are an amazing alternative when you are looking to pump up the nutrition in your meal. Toss in a pan with a little olive oil to heat through and you get a delicious option that even a die hard pasta fanatic will love.

- 1 lb ground turkey
- 2 tablespoons Hellmann’s Mayonnaise
- 1 egg
- 1 packet Lipton Recipe Secrets
- ½ cup panic breadcrumbs
- 1 pint cherry tomatoes
- 2 cloves garlic, minced
- ½ cup Sir Kensington’s Pepperoncini Italian Dressing and Marinade
- 2 large zucchini, spiralized
- 1 teaspoon olive oil
- salt and pepper to taste
- Preheat the oven to 375º F.
- Spray a rack with cooking spray and place on a baking pan
- Place all meatball ingredients in a bowl and mix to combine.
- Shape the mixture into 24 (1-inch) meatballs. Place 1 inch apart onto the prepared rack.
- Bake for 20 – 25 minutes until cooked through.
- While the meatballs bake, prepare the blistered tomatoes by adding the ingredients into a skillet.
- Cook for 8 – 10 minutes, until tomatoes are blistered – stirring once during cooking.
- Finally, prepare the Zoodles by heating the olive oil in a skillet. Add the zucchini noodles and cook for 1 – 2 minutes, just until heated through. Season with salt and pepper to taste.
- Assemble by adding the prepared zoodles to the plate and top with meatballs and blistered tomatoes. Garnish with chopped parsley, if desired.
