Breakfast for dinner is a favorite around here, but sometimes I like to mix things up. This sausage and pepper biscuit casserole is kind of like a quiche flipped upside down with a biscuit crust. And you can certainly just used canned biscuit dough, but making the dough yourself is not very difficult and makes it taste so much better. Also, you can totally mix up the ingredients! I used breakfast sausage and peppers, but you could do any kind of meat or vegetables that your family likes.
Sausage and Pepper Biscuit Casserole
I was inspired to make this because of all the peppers growing in our garden! I also have some bulk sausage in the freezer that I found marked down at Aldi, so it made for a very cheap meal overall.
The first step is to brown the sausage.
Any kind of peppers will do—I used a mixed of Italian frying peppers and small lunchbox peppers.
Once the sausage has started to cook, you can throw the peppers in and cook them until they soften.
If you need to, you can drain the grease from the sausage, but this particular batch didn’t have that much, so I left it.
For the biscuit topping, you’ll need flour, baking powder and salt to start.
Then you’ll add in 6 tbsp. of cubed, cold butter (even frozen butter works!).
I usually end up using my hands to mix the butter into the flour. You want as much of the flour to be touching butter as possible. Then, pour in the 1 cup of milk.
The other layer is the eggs and milk. Whisk together a dozen eggs with milk, salt and pepper.
Now you’re ready to assemble your layers. First, put the sausage and peppers in the bottom of a casserole dish.
Then top with 2 cups of cheese.
Finally, pour the egg mixture on top and then drop the biscuit dough in blobs on top. Pour 2 tbsp. melted butter on top.
Bake at 375 for about 45-50 minutes. You can stick a knife in the middle to check and make sure the egg part is no longer runny to be sure it’s done. Serve with fruit and enjoy!

- 1 pound breakfast sausage
- 2 cups chopped veggies of your choice
- 2 cups cheddar cheese
- 12 large eggs
- 1.5 cups whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 cups all-purpose flour
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 6 tbsp. unsalted butter, cubed and cold
- 2 tbsp. butter, melted
- 1 cup milk
Directions
- Chop up peppers and cook with sausage until sausage is browned and peppers are softened.
- Mix flour, baking power and salt in a bowl. Add in 6 tbsp. cubed, cold butter.
- Use your hands to mix the butter with the flour and then add 1 cup milk.
- In a large bowl, whisk together 12 eggs, 1.5 cups milk, and salt and pepper.
- Layer the bottom of a casserole dish with the sausage and pepper mixture.
- Top with 2 cups of cheese.
- Pour egg mixture over top and then drop biscuit dough in blobs on top.
- Pour 2 tbsp. melted butter over the top.
- Bake at 375 for 45-50 min.
