Breakfast for dinner is one of our favorite easy options. It can also be pretty frugal, as at least in our house, it usually involves eggs. As for sides, fruit is a great option that goes along with most breakfast recipes. One of our more recent family favorites is a twist on the traditional hashbrown breakfast casserole, that uses frozen hashbrowns. Instead, this option uses frozen tater tots! They already have some seasoning in them and add a great texture! The meat and cheese options are flexible, so enjoy this recipe for tater tot casserole!
Tater Tot Casserole Recipe
This tater tot casserole only has a few ingredients! You’ll need a large bag of frozen tater tots, a dozen eggs, some kind of breakfast meat, cheese, seasonings, and heavy cream. Then some optional green onions for garnish!
The first thing you’re going to do is heat oven to 350 degrees. While it’s preheating, cook your meat (I used bacon, but breakfast sausage is also delicious!) until brown and let drain on a paper towel.
Spray a 9×13 pan with cooking spray and dump in the frozen tater tots.
Then sprinkle the cooked bacon over the tater tots.
Whisk together 12 eggs, 1 tbsp. creole seasoning, and 1/3 cup heavy cream. If you don’t want to use creole seasoning, you can just use salt and pepper. Or make up your own seasoning combo!
Pour the egg mixture over the bacon and tater tots, then top with the cheese. I used Monterey jack because I had a bag of it in the fridge. But any cheese will work! Sprinkle the green onions on top.
Bake for approximately 45 minutes or until casserole is set and top has begun to brown.
