If there’s a more iconic, time-honored flavor than Edy’s® Original Rocky Road Ice Cream, I don’t know what it is. This classic blend was first crafted in 1929 and is the ultimate of ice creams with mix-ins. It all starts with rich, velvety chocolate ice cream before folding in crunchy almond bits and bite-size chewy marshmallows for the perfect scoop every time.
And as good as it is out of a bowl or a waffle cone, I’m especially fond of these Rocky Road Bites. These bite-sized treats are the perfect way to take your dessert snacking to the next level. I bet you they’ll be gone in a flash!
- EDY’S® GRAND Rocky Road ice cream or SLOW CHURNED® Rocky Road light ice cream
- Jumbo marshmallows
- Chocolate chips or chocolate melting wafers
- Chopped almonds
- Place the chocolate in a microwave safe bowl and cook on high for 1 minute.
- Stir the chocolate and microwave for an additional 1 -2 minutes , stirring every 15 seconds until the chocolate is smooth.
- Slice marshmallows in half and dip in the melted chocolate.
- Roll each marshmallow half in sliced almonds and let the chocolate sauce dry and harden a bit.
- Top with a small scoop or spoonful of Rocky Road and enjoy!

- Edy’s® Slow Churned® Vanilla Light Ice Cream
- Sugar cookies (store bought or homemade)
- Large marshmallows
- Pull-n-Peel Licorice
- Mini chocolate chips
- Orange sprinkles
- Dark brown icing
- Spread a thick layer of ice cream onto a sugar cookie and place in the freezer to set.
- In the meantime, decorate a large marshmallow with icing and an orange sprinkle for the nose.
- When you’re ready to serve, remove from the freezer and add a string of licorice for the scarf and mini chocolate chip buttons!
